Naan pizzas!

I’ve become the queen of fridge foraging meals lately; with work piling up quickly, upcoming travel schedules forcing me to work in advance on some projects, the home office update — hence, the irregular posting on this space (sigh), I’ve been looking for quick, healthy meals without extensive trips to the supermarket. We’re also trying to avoid eating out or food delivery service, because 1. it costs an arm and a leg, and 2. I don’t always know what’s in my food; is it organic? locally produced? 3. I like the feeling of a home cooked, elaborated with love meal for my family. Plain and simple. Although I’ve rediscovered the joy of making my own pizza dough this summer during my break, let’s be real, it doesn’t happen a lot these days but I understand the importance of eating a balanced diet, especially now as I try to stabilize my weight loss – plus, my guts are not fond of pizza dough anyway lately, but I digress!

Back to my naan pizza story. 

Naan pizzas are so simple to make, it hurts. You can make your own naan (I bookmarked this gluten-free recipe) or buy them at the store. Then, simply add any topping you have at home, just like a pizza… So simple, it hurts, right?

Naan Pizza | French By Design

For these naan pizzas that I prepared last weekend to enjoy with Monsieur for an impromptu date night-in al fresco on our rooftop patio, I used: 

  • Whole Foods organic garlic and herbs naans
  • Homemade pesto (as a base)
  • Whole Foods sun-dried tomatoes, chopped
  • Homemade grilled peppers (store bought works just as fine)
  • Organic feta cheese
  • Kalamata olives
  • Seasonings: Fleur de sel de Guérande, black pepper, fresh chopped oregano from my tiny herb garden, and a few twigs of fresh rosemary, from my patio as well!)

The steps? Again, so easy it hurts, really. Just like a pizza; pesto at the base, then the other toppings in random order, but feta cheese last, then in a 360℉ pre-heated oven for 10 to 15 minutes. All you have to do is pour yourself a glass of rosé and enjoy the company! These simple mediterranean-inspired naans were so flavorful, we felt like we were in Provence under the string lights of a little café! I’m planning to try a tuna, tomato sauce and capers version next…
