This week, we prepared some madeleines at home to enjoy for breakfast and after-school snacks, so I thought it was perfect timing to shoot them and share the recipe with you.
For 32 madeleines, you will need :
- 1 cup of cake flour
- 1 tsp. of baking powder
- 3 eggs
- 2/3 cup of granulated sugar
- 2 tsp. of orange flower water [or vanilla extract if you prefer]
- 8 Tbs. (1 stick) of unsalted butter, melted
- 3 Tbs. of milk
- Preheat your oven to 400°F. Generously butter the molds of a non-stick madeleine pan.
- Beat together the egg, the granulated sugar, the orange flower water and the milk.
- Add flour, baking powder and melted butter.
- Spoon the batter into the prepared molds, filling each one about three-forth full [do not fill, as the mixture will raise while cooking]
- Bake until the madeleines are light brown around the edges and on the bottom, 10 to 12 minutes.
- Remove from the oven and immediately remove the madeleines from the pan to a wire rack. Enjoy!
These madeleines are perfect with chocolate spread for an afternoon snack, or with jam for breakfast. Bon appétit!
