Food Files | French Madeleines

This week, we prepared some madeleines at home to enjoy for breakfast and after-school snacks, so I thought it was perfect timing to shoot them and share the recipe with you.

Food Files: Madeleine | French By Design

For 32 madeleines, you will need :

  • 1 cup of cake flour
  • 1 tsp. of baking powder
  • 3 eggs
  • 2/3 cup of granulated sugar
  • 2 tsp. of orange flower water [or vanilla extract if you prefer]
  • 8 Tbs. (1 stick) of unsalted butter, melted
  • 3 Tbs. of milk

  • Preheat your oven to 400°F. Generously butter the molds of a non-stick madeleine pan. 
  • Beat together the egg, the granulated sugar, the orange flower water and the milk.
  • Add flour, baking powder and melted butter.
  • Spoon the batter into the prepared molds, filling each one about three-forth full [do not fill, as the mixture will raise while cooking]
  • Bake until the madeleines are light brown around the edges and on the bottom, 10 to 12 minutes.
  • Remove from the oven and immediately remove the madeleines from the pan to a wire rack. Enjoy!

These madeleines are perfect with chocolate spread for an afternoon snack, or with jam for breakfast. Bon appétit!
