With the chaos and traumatic events we lived in these past 2 weeks, I’ve been eating like it was my last day on earth – except… it wasn’t my last day on earth. After all, they don’t call it comfort food for no reason, do they?

    I love this sweet potato salsa with avocado and fresh tomatoes: http://www.marthastewart.com/863962/roasted-sweet-potato-salsa. You can serve it as a healthy side dish or make it a taco filling by adding black beans and some queso fresco. Bon appetit!

      Dang, this looks good, @Alyssa! Thank you so much for this recipe. Love the twist as a taco with beans and cheese, but my jeans are telling me to go with the side dish version :-P

    Everything here looks divine! Beautiful photos. If I just *had* to choose, the avocado|salmon cups and caramelized peach caprese could comprise breakfast, lunch, and dinner for 30 days straight, I’m quite sure of it.
